Ingredients:
2 Garlic cloves, minced
1 Medium onion, diced
2 Medium carrots, diced
1 Medium sweet red pepper, diced
1 Celery stalk, diced
2 Small zucchini, diced
2 Cups green cabbage, shredded
2 Cups swiss chard, chopped
2 cups cauliflower, small florets
2 Cups broccoli, small florets
2 Teaspoon fresh thyme, chopped
2 Cups vegetable broth
2 Tablespoon fresh parsley or chives, chopped
1/2 Teaspoon salt
1/4 Teaspoon fresh ground black pepper
2 Tablespoon fresh lemon juice
Special tools/utensils needed: stock pot
Directions:
Put garlic, vegetables, thyme and broth in a large stock pot. Cover and bring to boil on high heat; reduce heat to low and simmer, partly covered for 10 minutes. (For a thicker soup, puree a portion with an immersion blender).
To each bowel, add parsley/chives, salt, pepper and lemon juice to taste.
